1 cup raw cashew, soaked in water overnight or in boiling water for one hour min (*read optional instruction)
3 tbsp coconut oil
3 tablespoon maple syrup (you can use less if you want it less sweet)
3 tbsp water
1 vanilla pod**
Once cashews are soaked, discard water, rinse and add them to a food processor or high speed blender with the rest of the ingredients and blend until silky smooth.
*Instead of soaking the cashews, you can place them on a baking tray and roast them for 10 min at C. Roasting them will add more flavour.
**When opening a vanilla pod, cut it lengthway in half then hold down the tip of the bean against the cutting board to carefully scrape out the seeds using the tip of a knife. Here's a good video demo. Alternatively you can use 1 or 2 tsp of vanilla extract, but it wouldn't give you the same flavour as the pod.
