Manakeesh are a popular Lebanese flatbread typically topped with Za’atar, which is a blend of different spices including thyme, sumac, toasted sesame, that is mixed with olive oil. It can be served with cucumber, tomatoes, mint and many people enjoy it with greek yogurt while I prefer it with smashed avocado. (not surprising to some of you! :D)
This popular Lebanese breakfast is traditionally made using wheat flour and yeast, both of which I’m intolerant to that’s why I decided to have a go at a gluten and yeast free version and it turned out delicious.
Besides, the main ingredients being oats and flaxseeds make these so rich in protein and fibre!
Makes about 10 manakeesh (5 inches diameter each)
