**if you don’t have a blender or food processor, you can use a potato masher or fork and mash well until everything sticks together. If you're not using any machine, use oat/almond flour instead of rolled oats or whole almonds.
makes 6 patties:
1 can black beans, drained(or 1 1/2 cups cooked beans)
1 small onion, finely chopped
1/2 cup coriander, finely chopped
2 tbsp rolled oats or oat flour (almonds/almond flour work too instead of oats)
2 tbsp ground flaxseed + 6 tbsp water
3 tbsp olive oil
1 tbsp apple cider vinegar
1 garlic clove, crushed
1 tsp cumin
large pinch of sea salt (or to taste)
Pre-heat the oven to 180 C
Start by placing 2 tbsp of flaxseed with 6 tbsp of water, mix well and let them sit for 10 min until they form a gel-like consistency.
Then heat 1 tbsp of olive oil in a small skillet over medium heat and sauté the onion for 5 min or until golden brown. Once cooked set aside and prepare the rest of the ingredients.
Place the cooked beans in a food processor** or high speed blenderalong with the oats, olive oil, vinegar, garlic, cumin, salt and blend for a minute or 2 until well combined. Add the soaked flaxseed and blend for 30sec.
Place the mixture in a large bowl then add the chopped coriander and sautéed onion then mix well.
Grease a baking tray with a bit of coconut oil then divide the mixture into 6 pattieson the baking tray
Use a small spoon to press each down and shape them into round patties.
Cook on each side for 15min
Serve with guacamole/ smashed avocado and/or any toppings/bun of your choice.
