** to make the chia eggs: Soak 3 tbsp of chia seeds with 12 tbsp water in a cup and mix well. Let them sit for 10 min until the chia seeds has absorbed the water. (you may want to mix it a few times)
Pre-heat oven to 180C
1- Place all dry ingredients in a food processor and blend until a flour forms. Remove and place the mix in a large bowl.
2- Place all wet ingredients in the food processor except for the chia eggs. Blend until it’s very smooth and creamy. Once the chia eggs are ready, add it to the rest of the mix in the food processor and blend for 30 sec until its all combined
3- Place the wet mixture over the flour mix in the bowl and stir well until it forms a dough (at this point you can taste it and see if you like the sweetness)
4- Grease a loaf tin with coconut oil and then pour in the mix and allow it to bake for about 45min to an hour.( when it's ready, the top will have a golden brown colour and edges begin to crisp)
5- Remove from oven and let it sit for 15 min before cutting.
